Soft ginger cookies are lightly spiced treat with a warm flavor and tender texture. The ginger and spices create a comforting sweetness without being overpowering. They are a simple dessert that pairs well with tea or coffee.
Ingredients
- 2 1/4 cups all-purpose flour
- 2 tablespoons white sugar
- 2 teaspoons ground ginger
- 1 teaspoon baking soda
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon salt
- 3/4 cup butter (softened)
- 1 cup white sugar
- 1 large egg
- 1/4 cup molasses
- 1 tablespoon water
Instructions
- Preheat the oven to 350F. Put 2 tablespoons of sugar in a small bowl and set aside.
- In a medium bowl sift flour, ginger, baking soda, cinnamon, cloves, and salt together.
- With an electric mixer in a large bowl beat butter and 1 cup of sugar together until light and fluffy. Beat in egg; stir in molasses and water. Gradually stir flour-spice mixture into a molasses mixture until well combined.
- Shape dough into 24 walnut-sized balls with floured hands. Roll each ball in the set aside sugar to coat.
- Place cookie 2 inches apart on ungreased cookie sheet and flatten slightly.
- Bake in the oven until the tops crack and centers are soft (8 - 10 minutes).
- Remove from oven and let cool on the baking sheet for 5 minutes and then transfer to a wire rack to cool completely.
