Grilled Shrimp Skewers

Grilled shrimp skewers feature shrimp seasoned simply and cooked over high heat until tender and lightly charred. The grilling adds a smokey flavor while keeping the shrimp juicy. They can be served as an appetizer or paired with sides for an easy pescatarian entree.

  1. Place the olive oil, lemon juice, salt, pepper, Italian seasoning and garlic in a resealable plastic bag. Seal and shake to combine.
  2. Add the shrimp to the bag and seal. Toss to coat evenly with the marinade.
  3. Marinate for at least 15 minutes or up to 2 hours. Do not marinate for longer than that,as the acid in the lemon juice will start to cook the shrimp.
  4. Thread the shrimp onto skewers. Heat a grill or grill pan over medium high heat.
  5. Place the skewers on the grill. Cook for 2-3 minutes on each side or until shrimp are pink and opaque.
  6. Sprinkle with parsley and serve with lemon wedges.
