Miso Glazed Cod

Miso glazed cod is a simple dish that combines tender baked cod with a savory, slightly sweet miso glaze. The mild flavor of the fish pairs well with the rich umami of the miso.

  1. 2 - 3 days beforehand make the miso marinade and marinate the fish. Bring the sake and the mirin to a boil in a small saucepan over high heat. Boil for 20 more seconds to evaporate the alcohol.
  2. Turn down the heat to low. Add the miso paste and sugar, whisk until the miso and sugar are dissolved. Remove from heat and let cool to room temperature.
  3. Pat the cod fillets dry with paper towels. Place in a plastic ziploc bag. Add the marinade and turn the fish to coat. Seal bag and refrigerate for 2 - 3 days.
  4. On day of meal: Preheat oven to 400F. Heat 2 tablespoons vegetable oil in a oven-proof skillet over medium-high heat. Place fish skin-side-up in the pan in a single layer. Cook until bottom of the fish browns and blackens in spots (about 2 - 3 minutes) on each side.
  5. Transfer the skillet to the oven and bake until the fish is opaque and flakes easily ( 5 - 10 minutes).
  6. Serve on top of rice with your favoite vegetables.
