Miso glazed cod is a simple dish that combines tender baked cod with a savory, slightly sweet miso glaze. The mild flavor of the fish pairs well with the rich umami of the miso.
Ingredients
- 1/4 cup sake
- 1/4 cup mirin
- 1/4 cup white miso paste
- 3 tablespoons sugar
- 4 cod fillets
- 1/4 tablespoon salt
- 2 tablespoons vegetable oil
Instructions
- 2 - 3 days beforehand make the miso marinade and marinate the fish. Bring the sake and the mirin to a boil in a small saucepan over high heat. Boil for 20 more seconds to evaporate the alcohol.
- Turn down the heat to low. Add the miso paste and sugar, whisk until the miso and sugar are dissolved. Remove from heat and let cool to room temperature.
- Pat the cod fillets dry with paper towels. Place in a plastic ziploc bag. Add the marinade and turn the fish to coat. Seal bag and refrigerate for 2 - 3 days.
- On day of meal: Preheat oven to 400F. Heat 2 tablespoons vegetable oil in a oven-proof skillet over medium-high heat. Place fish skin-side-up in the pan in a single layer. Cook until bottom of the fish browns and blackens in spots (about 2 - 3 minutes) on each side.
- Transfer the skillet to the oven and bake until the fish is opaque and flakes easily ( 5 - 10 minutes).
- Serve on top of rice with your favoite vegetables.
